Oh! That's easy, actually. Human flesh is supposed to have a similar taste to pork. Some ancient cannibalistic cultures refer to it as "long pork" and so I imagine it cooks much the same, although it does remind me a bit of beef too, in the way it cuts. I'm no expert though, so...
